Roasted Lamb

Ingredients

3 kg boneless leg of lamb
7-8 garlic cloves, minced
1/4 tsp minced ginger
2 tbsp minced onion
1/2 tsp oregano
1/2 tsp pepper
Salt as per taste
2 tbsp cumin seeds powder
2 tbsp coriander seeds powder
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1/2 tsp garam masala
1/2 cup olive oil
1 tbsp vinegar
1 tbsp lemon juice



Method

1.Cut cris-cross into the leg of lamb
2.Mix all the ingredients
3.Marinate the meat with the above mixture
4.Refrigerate for 10 hours
5.Preheat the oven at 450 o F
6.Place the meat in the oven
7.Reduce the oven to 325 oF
8.Let the lamb bake for 2-1/2 -3 hours till it is tender, basting often with the sauce in baking dish 9.Serve with crunchy salad
